This whiskey is not stored in new casks, which is why it must not be called Bourbon. Instead, it is stored on used casks that have attracted lots of flavor to the fresh whiskey. It sounds dubious at first, but you immediately realize that Mitcher’s has something right when you taste the result.
Here is caramel, corn, and vanilla, as you know it from good, classic Bourbon. Here, too, is a pleasant taste of apricot that tames the sweetness.
